Local Food
Hello, we are Nicola Tipler and Helen Wright. We have recently started work for True Food as local food co-ordinators. We are job sharing and split the week between us. The purpose of the role is to manage the supply of local food and to increase the amount of local food True Food sells.
On a day to day basis we decide how much to buy from each of our local fruit and vegetable suppliers. We then collect and prepare the produce for sale. We also go to each market and set out all the fruit and vegetables.
We are looking for new suppliers of different types of local food. We have recently bought a quarter of a cow from Waltham Place near Maidenhead. We have also started supplying traditionally made bread from the Cornfield Bakery.
The following fresh produce is currently in season and available from local suppliers. As we use several small suppliers not everything will be available at all markets. If you need something in particular then email localfood@truefood.coop or ring 0845 330 8272 to check. We can also order extra from a local supplier for you if you let us know a few days in advance.

Meat from Laverstoke Farm

Front page | LocalFoodNewsWe have started taking regular orders for meat from Laverstoke Park Farm, a biodynamic/organic farm near Basingstoke (27 miles from the True Food Warehouse). As well as the usual selection of lamb, beef, pork and whole chickens Laverstoke Park have Water buffalo. You can buy buffalo sausages, burgers and mince as well as milk and delicious mozzarella cheese.
Initially we will be having a weekly delivery from them on a Wednesday. Orders need to be with us by Monday morning for delivery on the Wednesday. We will then bring them to the market of your choice (frozen for Monday and Tuesday markets).

We still have some of the Waltham Place beef left. Again look out at the markets or email us for more details.

Local Meat

We currently have some beef from Waltham Place, an organically farmed estate near Maidenhead. There are various joints and cuts in the freezer at the True Food warehouse. There is a sheet at markets listing what is available with prices. You can then order what you want and it will be delivered frozen to your most convenient market.
We are also now taking orders for turkeys and other Christmas meat. These are from Sheepdrove Organic Farm in Lambourn, Berkshire. Order forms are available at all markets.

Green Tomatoes

Green Tomatoes with Indian Spices
Serve this as part of an Indian dinner or as a vegetarian main course with rice.
40 min | 20 min prep
SERVES 2 -4
1 lb green tomato, approx
1/4 cup oil (for frying)
1/2 teaspoon fenugreek seeds or cumin seed
1/2 teaspoon cumin seed
2 green chilli peppers, seeded and finely chopped (or more)
1 teaspoon chilli powder
2 teaspoons ground coriander
1/2 teaspoon turmeric powder
1/2 teaspoon mango powder or 1/2 tablespoon lemon juice
salt
sugar
2 cloves crushed garlic
Wash and quarter the tomatoes, if they are very large, halve the quarters again.
Heat the oil in a wok or large frying pan; add the fenugreek and cumin seeds.
When they start to crackle add the tomatoes and green chillies, fry this for 2 minutes.
Add everything else except the garlic, stir, cover and cook for approx 6 minutes.
Uncover, add the garlic, turn up the heat and stir fry for 2/3 minutes, you will see that the oil which was separating first will now blend and make it more saucy together with the juices from the tomatoes.
