Ginger cookies

This vegan recipe was adapted from Razzle Dazzle Recipes and has been tested at the Downshire tea party. They're really easy to make - the time consuming bit is grating the ginger!

Ingredients

  • 2 cups plain flour
  • 1/2 cup spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons grated ginger root
  • 3/4 cup maple syrup
  • 1/4 cup molasses
  • 1/2 cup sunflower oil

Method

  1. Preheat oven 350F / 180 C / Gas mark 4.
  2. Mix flour, baking powder, baking soda and salt in a large bowl.
  3. Grate (or finely chop) the ginger into the mixture.
  4. Stir in the maple syrup, molasses and oil.
  5. Oil a couple of baking sheets, scoop out dessert spoons of mixture and position about an inch apart. As they bake they'll flatten and spread so the shape doesn't matter too much. If you want smooth round cookies, then flatten and shape before baking.
  6. Bake for 15 minutes, then cool on a wire tray.
